The domaine's winemaking is characterised by the following methods

  1. Hand harvesting into small cases (50 litres) at full maturity
  2. Rigourous sorting on 3.5m long vibrating sorting table
  3. Total avoidance of all non-essential additives or manipulations.
  4. Aging for 12 months in small french oak barrels, of which only a small percentage are new.
  5. Bottling by hand without fining or filtration.
